Simple Stir Fried Minced Pork with Choy Sum
Crunchy, crispy, chewy and very delicious – this Stir Fried Minced Pork with Choy Sum is a perfect balance of veggies and protein in one dish. It also only takes less than 10 minutes of cooking time, for a total of 15 minutes from start to finish! This is another one of my go-to recipes when I want a simple and easy dish for my family of 4.
The choy sum is cooked al-dente, contrasting the chewy, tasty minced pork, and crunchy garlicky bits in between each bite, this recipe will surely be a winner!
This dish is enough for 5 servings.
Ingredients
Minced pork – the best ratio of lean to fat is 80 to 20, but for this recipe? Don’t sweat the details. Keep the higher-grade minced pork for hamburger recipes. As the choy sum releases a lot of water, this dish will be quite juicy. If pork is not your preferred meat, swap it with chicken, turkey or even beef!
Choy sum – or also known as the “heart of the vegetable”, or “Chinese flowering cabbage”, is cut into smaller pieces to shorten the cooking time, and make it easier to enjoy. Be sure to separate the stems and leaves parts, as the stems will take a longer time to cook compared to the leaves. This ensures the choy sum retains its bright green colour.
Garlic – is fried with cooking oil before adding the minced pork. This achieves 2 things; crispy caramelized garlic for a burst of flavour in between bites, and to infuse the flavour and fragrance into the cooking oil. This makes the dish more flavourful and tasty.
Cooking oil – to infuse the garlic flavour and caramelize it, as well as stir fry the minced pork.
Salt – to season the minced pork.
Light soy sauce – adds a little saltiness to season both the pork and choy sum. As it is usually concentrated, use only 1 tsp, especially since we are also adding some oyster sauce.
Oyster sauce – adds a depth of umami to the dish. It can be omitted if unavailable.
Sesame oil – adds a little fragrance and nutty flavour to the sauce. It can be omitted if unavailable.
Coarse black pepper – adds some seasoning to the dish as a whole. Freshly ground black pepper would be even more flavourful if available.
Red chilli – brings a little heat and colour to the dish. This is the normal red chilli, and not the red bird’s eye chillies. If it is not available, feel free to omit it.
Water – optional to add, if the minced pork and choy sum stems are a little dry.
Steps
Here are the brief steps to make Stir Fried Minced Pork with Choy Sum:
- Marinate minced pork.
- Cut choy sum.
- Fry garlic.
- Fry minced pork.
- Add seasonings and fry until well-combined.
- Add choy sum stems.
- Add choy sum leaves.
- Mix in fried garlic.
Tips
- Marinating the pork with salt a little at a time helps distribute it more evenly.
- Cutting the choy sum into bite-sized pieces shortens the cooking time and makes it easier to eat.
- Frying the garlic with oil infuses the garlic flavour into it, making the sauce more flavourful. Removing some fried garlic for garnishing keeps its crispy texture.
- Press pork flat against the back of the turner break it apart and cook evenly.
- This recipe yields cooked and crunchy choy sum stems. For softer stems, stir fry them for another 2 minutes, before adding the choy sum leaves.
- Serve with fluffy white rice and sunny-side-up eggs for a complete one-dish meal!

Storage Instructions
This Stir Fried Minced Pork with Choy Sum dish is best consumed immediately after cooking as the stems are crunchy and the garlic bits are crispy.
If there are leftovers, let them cool completely before storing them in an air-tight container in the fridge for not more than a day. Be sure to reheat before consuming it the next day.
Personally, I do not recommend freezing this dish as the choy sum’s texture may be mushy after thawing.

Stir Fry Minced Pork with Choy Sum
Equipment
- Sharp Kitchen Knife
- Chopping Board
- Wok
- Turner
Ingredients
- 350 g pork, minced
- 1/2 tsp salt
- 430 g choy sum, washed, chopped to pieces, leaves and stem separated
- 50 ml cooking oil
- 50 g garlic , minced
- 40 g red chillies, cut
- 1/2 tbsp coarse black pepper
- 1/2 tsp sesame oil
- 1 tsp light soy sauce
- 1 tbsp oyster sauce
- 100 ml water
Instructions
- Marinate the minced pork with 1/4 tsp of salt, and rub to distribute it evenly. Turn the pork from bottom to top, and repeat the marination with the other 1/4 tsp of salt. Set aside.
- Slice the choy sum stems into 1/2 cm in length. Set aside in a bowl. Roughly slice the choy sum leaves into bitr-sized pieces and set aside in a separate bowl.
- Add cooking oil into a wok over medium heat, and let it warm up.
- Add the minced garlic and stir fry for 2 minutes or until crispy and golden brown. Remove 2/3 of it from the wok and set aside.
- Add the pork into the wok. Stir fry and flatten the lumps for about 45 seconds. Continue to stir fry for about 2 minutes, or until the colour changes to grey.
- Add the cut red chilli, coarse black pepper, sesame oil, light soy sauce and oyster sauce. Stir fry for 30 seconds, or until the minced pork is well-mixed.
- Add all the choy sum stems and stir fry for 30 seconds. Add water if it is too dry. Fry for another 1.5 minutes, or until the choy sum is just cooked.
- Taste and adjust as preferred.
- Add the choy sum leaves. Stir fry for 45 seconds, or until soft.
- Switch off the heat. Add most of the crispy fried garlic and mix until well-combined.
- Garnish with the rest of the crispy fried garlic. Serve with rice and sunny-side-up egg.
