Delicious Pork Ribs Stew with Pumpkin

Stews are nourishing, thick and very delicious. Made from braising meat and ingredients in water until soft, this Pork Ribs Stew is full of extracted flavour and nutrients. The best part? Let it rest overnight for the meat to fully absorb the flavours of the stew. It tastes even better the next day.
This Pork Ribs Stew with Pumpkin is very easy to cook and is very enjoyable with rice.
This recipe serves 5.
Ingredients
Baby Back Pork Ribs, which are the most tender part of pork ribs. It is very suitable for this recipe as the meat is very soft yet keeps its shape, and the flavours are extracted from the bones into the stew.

Salt, to season the pork ribs and stew.
Yellow Onions give the stew most of its sweetness. By the time the pork has finished braising, all of the yellow onions would have melted into the stew.
Shiitake Mushrooms add a unique, earthy fragrance and flavour to the stew. They go very well with the flavour of pork. As they were dried shiitake mushrooms, they need to be rehydrated in hot water for about 1 hour, or warm water for 4 hours.
Pumpkin, cut into cubes. They added sweetness and body to the pork ribs stew. About 2/3 of them were added with the pork ribs so they will be fully melted into the stew. The rest of the 1/3 was added 20 minutes before the end of cooking to soften them while keeping their shape.
Water is used to braise the pork ribs and pumpkin, softening them.

Sesame Oil adds a little fragrance and sweet, nutty flavour to the stew. It can be omitted if unavailable.
Oyster Sauce is used to deepen the stew with umami flavours. If unavailable, pork bone stock can be used to replace most of the water and this seasoning.
Ground Pepper to season the stew, and add a little spice to it.
Parsley Leaves add a little contrasting colour, fresh fragrance and herbal flavour to the stew. They were added to the end of the cooking; in which the residual heat will soften them a little. They can be replaced with cilantro, spring onions, or even omitted completely if preferred.
Steps
Here are the brief steps to make Pork Ribs Stew with Pumpkin:

- Marinate the pork ribs.
- Braise yellow onions, pork ribs, shiitake mushrooms, 2/3 of the pumpkin and water for 30 minutes, stirring often.
- Add salt, sesame oil, pepper, oyster sauce, water, and braise for another 30 minutes on high heat.
- Add the rest of the pumpkins. Braise for another 20 minutes.

- Test the pork ribs.
- Taste and adjust.
- Add parsley and stir.
- Dish out and serve.
Tips
- Caramelizing the yellow onions first adds a depth of flavour to the pork ribs stew after it has fully melted.
- Braise the pork in a little water to encourage it to release more flavours into the water.
- Add 2/3 of the pumpkin cubes to release their sweetness into the stew while braising the pork ribs.

Storage Instructions
Leftovers can be stored in the fridge for up to 2 days, to be reheated before consuming.
This recipe is also freezer-friendly; it can be frozen for about 2-3 weeks. Make sure to thaw and reheat until boiling before enjoying it.

Pork Ribs Stew with Pumpkin

Ingredients
- 850 g pork ribs, baby back ribs
- 1/2 tbsp salt
- 50 g yellow onions, cut
- 10 shiitake mushrooms, softened, cut into half
- 225 g pumpkin, cut into cubes
- 1.6 L water
- 1/2 tsp sesame oil
- 1/2 tsp pepper, ground
- 15 g parsley leaves, chopped
Instructions
- Marinate pork ribs with 1/4 tbsp of salt evenly. Set aside.
- Heat a wok over medium heat. Add the yellow onions.
- Spread the pork ribs evenly over the yellow onions.
- Add the shiitake mushrooms. Stir and rotate until well-combined.
- Add about 2/3 of pumpkin (150g) and 100ml of water. Cover the wok and braise for about 30 minutes, stirring often.
- Stir in the rest of the salt, sesame oil, pepper, oyster sauce and 1 litre of water until combined. If the water is not enough to fully submerge the ingredients, add 500ml more.
- Set the heat to high and let it braise for another 30 minutes, or until the pork ribs are soft. Ensure to stir often to prevent the bottom of the wok from burning.
- Add the rest of the pumpkin. Cover the wok and let it cook for another 25 minutes.
- Use a fork to poke through the pork ribs to test for tenderness. Taste and adjust the stew.
- Switch off the heat. Add the chopped parsley and give it a stir.
- Dish out the stew and serve as-is or with white rice.
